What should I write to indicate that the film is black and white?

Unless you're producing the script yourself, I don't think you get any say in whether it's in color or B/W.

If the entire film is this way, then I don't think you should include it.  That's more of the director's job to decide.

If it's like The Wizard of Oz, then it would go in the slug line.
