I love this scene from Spaceballs:

Down in the hole / Jesus tries to crack a smile / Beneath another shovel load

The scene from "Raiders of the Lost Ark" when Indy just shoots the big guy with the whip. So obvious but so surprising. When you know the reason of this action that wasn't planned in the script, you're more surprised.

The Robert McKee seminar from Adaptation. It's a classic.

Also, someone has finally downloaded a scene from one of my all time favourite films, “When You Comin' Back Red Ryder”, on youtube. I first saw this on video in 1989 and it's been in my top ten ever since. You need to see the whole film to truly appreciate it, but this scene showcases some of the film’s great dialogue. As one youtube poster said “Marjoe Gortner should've bagged an Oscar for this”.
